No-Cook Strawberry Pie

This pie filling is easy to make, sets up beautifully and it tastes like summer!

  • 1 9-inch pie crust [ Pre-Baked and cooled or see the graham cracker crust recipe link below ]

  • 1 1/4 cups mashed strawberries
  • 2/3 cup cane sugar
  • 3 T instant clear-gel aka: Knox Gelatin
  • enough whole berries to fill a 9-inch pie shell, halved if they are large


  • Lightly sweetened whipped cream, for serving.

    Bake the pie crust at 350 for 15 minutes or until golden. Cool completely.

    In a small bowl, stir together the sugar and clear-gel. This is important! If you stir straight clear-gel into a liquid, it lumps up and your recipe will be forever ruined.

    Stir together the mashed strawberries and the sugar mixture until sugar is dissolved. Pour over the whole berries and mix well. Pour into the baked pie shell. Chill several hours before topping with whipped cream and serving.
