Green Apple Caramel Popcorn




My Sister does one mean Caramel PopCorn for any family event we have so when I seen a recipe for 
Lucky's Shamrock Popcorn
I thought.. Why not ??? 
We can just add Green Food Coloring to her recipe also since her birthday is coming up on March 17th also and I will surprise her with Popcorn this time!

Included at the bottom is also a recipe for the JELL-O Version of flavored Popcorn. 

Green Apple Caramel Popcorn
Yields 14 cups of candy popcorn.

*1/2 cup of unpopped popcorn equals 4 quarts popped popcorn.

:: INGREDIENTS::
 
1/2 cup unpopped popcorn kernels
1/4 cup (1/2 stick) butter
1/4 cup white corn syrup (Karo)
1/8 cup water
1 cup granulated sugar
1/4 teaspoon baking soda
2 teaspoons Apple Flavor
1 tsp Caramel Flavor
3 drops Electric Green food coloring gel or equal

:: DIRECTIONS ::

1- Pop the popcorn kernels. Set aside in 2 large bowls.
2- Over medium heat, melt the butter in a medium sauce pan.
3- Add the corn syrup and water.  Stir.
4- Add the sugar.  Make sure not to let any sugar stick to the edges of the pan. If one grain of sugar is left undissolved, it can cause the whole batch to crystallize.
5- Bring to a boil and continue to cook until the mixture reaches 235-245 degrees. (Please use a candy thermometer). It is important for the mixture to reach this temperature, if it doesn’t the candy will not harden properly.
6- Add the baking soda and stir quickly as the mixture begins to bubble. Once bubbly and frothy, remove the pan from heat.
7- Add the flavor and food coloring until mixed in.
8- Pour over the popped popcorn in both bowls. Fold into the popcorn until evenly coated.
9- Store in AirTight container "IF" you have any leftovers

Lucky's Shamrock Popcorn

Can  be made with Jolly Rancher Green Apple Gelatin, 2.79 OZ or Jell-O Green Apple Gelatin to make the Jell-O Popcorn version  which is also a lighter version of this candied popcorn.


:: INGREDIENTS / SUPPLIES ::
 8 cups of popped popcorn
1/4 cup butter
3 tablespoons light corn syrup (honey is a good substitute)
1/2 cup sugar
1 3oz box of Jello (do not use sugar-free)
Large bowl
Sauce pan
Rubber scraper
Large Brown Paper Bag
 1. Preheat oven to 300 degrees F. Line a cookie sheet/jelly roll pan with foil or parchment. If using foil, spray lightly with nonstick cooking spray and set aside. Place popcorn in an extra-large mixing bowl.
2. Combine butter and syrup in a saucepan over medium heat. Stir until butter is melted. Add sugar and gelatin and stir to combine.
3. Increase heat and bring to a boil. Reduce heat and simmer 5 minutes.
4. After the sugar mixture has simmered immediately (and carefully) pour over the popcorn in the bowl. Mix immediately and continue stirring until the popcorn is well coated. Spread the mixture evenly onto the prepared pan.
5. Place the pan in the oven and bake for about 10 minutes.
6. remove the pan from the oven and allow it to cool to room temperature.
7. Break the popcorn into pieces and enjoy!






While it is still hot, you have 3 choices,
 Leave it in the bowl the way it is and start munchin', 
Spread it out on wax paper to make individual clumps,
 or Better yet, let's make Popcorn Balls, 
(be sure to grease your hands if you make popcorn balls).
