:: Ingredients ::
- 1 1/2 cups sweetened coconut flakes
- 1/4 cup sugar
- 2 tablespoon flour
- 2 large egg whites (about 1/4 cup)
- 1/2 tsp. almond extract
Variations {I Split dough into two for color variations and added
- 1 drop food coloring (Red=Pink, Blue=Blue, etc..) for each color tone.
Candy Coating
- 2 squares vanilla almond bark
:: Directions ::
- Preheat the oven to 325°.
- In a medium bowl, whisk together sugar, flour, egg whites, almond extract. You will want this to look a bit foamy so whish whisk whisk.
- Add in Coconut til evenly coated.
- Use a large tablespoon to form your macaroons on a baking sheet lined with parchment paper. Each color will give you approximately 6 macaroons if split into two color tones.
- NOTE: Do not compact the cookies or the toasty edges will not form. Scoop them loosely. Wet fingers slightly to form peeks if desired.
- Bake for 15-20 minutes, or until golden and macaroon looks "baked". Allow to cool for about 5 minutes on your baking sheet before moving to a cooling rack. Let cool completely before dipping.
- Melt the almond bark in the microwave on short pulses. { Or I just boil a cup of Water in the microwave and use a small plastic container to "float" in the water persay, then add the almond bark to the plastic container... to melt the almond bark} and pour the melted almond bark into a small bowl and dip the bottom of each cookie in the almond bark.
- Let the candy coating dry before serving.
The nicest trick about coating your macaroons is IF they turn out a bit dark on the bottom... your covering them in almond bark anyhow so it does not matter.
