Cookies with pudding, chips and candy??? Oh My! My kind of cookies.
I found this amazing flavor of "Candy Cane" Instant Pudding Mix and knew I'd love them. These cookies use the below recipe with Candy Cane Jell-O Instant Pudding Mix along with Andes Mint Chips and semi-sweet white chocolate chips as the add-ins. My 1st batch made about 3 dozen cookies
Basic Pudding Cookies
(inspired by kraftrecipes.com)
:: INGREDIENTS ::
- 2¾ cups flour
- ½ teaspoon salt
- 1 tsp baking soda
- ¾ cup butter, softened
- ¾ cups brown sugar
- ¼ cup sugar
- 1 (3.4 oz) Candy Cane Pudding Mix
- 2 eggs
- 1 tsp vanilla extract
- 1 package white chocolate chips (12 oz)
1 cup Andes Peppermint Crunch Baking Chips
or 1/2 cup crushed candy canes, to top of cookies
:: DIRECTIONS ::
1. Preheat oven to 350 F.
2. Stir together flour, salt and baking soda and set aside.
3. In a large bowl, cream butter and sugars together.
4. Add in pudding package and beat until well blended.
5. Add eggs and vanilla and mix until smooth.
6. Add flour mixture slowly until well incorporated.
7. Add in the entire bag of white chocolate chips and mix.
8. Roll into 1" balls and place onto a greased baking sheet.
These cookies will spread in the oven.
I line mine with parchment paper or you can use Silpat also.
9. Gently pat the tops of the balls of dough to make a flat surface. Don’t completely flatten them! Add some more Andes Peppermint Crunch on top.
10. Bake for 8-10 minutes at 350 degrees. Do not over bake.
