Peanut Butter Cornflake Gems

These crisp and chewy peanut butter flavored cookies couldn't be easier to make, you don't even need to the oven on. I mix semi-sweet chocolate chips and a little milk to make a glaze to drizzle on top of the warm bars.

* In order to add more crunch to it, I use Frosted Flakes instead of plain ole' cornflakes. You can also use honey bunches of oats, any flavor Cheerios (banana is awesome), a chocolate cereal, Kix, Chex etc instead of the cornflakes, Just not a fruity kind of cereal aka Twix.

*Crunchy peanut butter works great if you're a peanut lover.


Ingredients
1 cup (200g) granulated sugar
1 cup (235 ml) light corn syrup
1 cup (246g) creamy peanut butter
1 tsp vanilla extract
4 cups (127g) cornflakes cereal
Red hots and sprinkles optional

Instructions
Line two baking sheets with parchment paper or wax paper (or just spread a long sheet of it across the counter).

In a large saucepan stir together sugar and corn syrup.

Bring the syrup and sugar to a boil for exactly 1 minute, remove from heat, stirring occasionally.

Immediately stir in peanut butter and vanilla.

Add in cornflakes and toss to coat well.

Immediately scoop mixture out and drop by rounded spoonfuls (using two spoons or a cookie scoop) onto lined baking sheets.
For Bars - Spread into a greased 8X8 inch pan

Let set at room temperature. Store in an airtight container.

Notes:
**If adding red hots or sprinkles immediately sprinkle some over after dropping each cookie before the start to set, otherwise sprinkles won't stick.
